Big and bold, cheap and cheerful, the short, orange, plump carrots we know today date back to Holland circa the 17th century. Fond of cross breeding, the Dutch eliminated the purple carrot that was native to the middle east. Back in ancient Greece and Rome carrots were a very different vegetable. They were long, thin, yellow roots with a very strong scent (pee-eww).
Despite this, the ancient Greeks and the Romans loved their carrots and knew all about their healing properties…
Gimme what you got
Containing a host of vitamins and minerals, carrots are a traditional Superfood. Cooked carrots are good for a number of ailments, and oddly enough can help to alleviate both constipation AND diarrhoea. Who knew!
Packed with antioxidants, a diet that includes plenty of carrots can also help to reduce unhealthy levels of cholesterol in the blood, as well as boosting the immune system.
Raw carrot juices contain more medicinally-active-ingredients than cooked carrots and carrot juice is recommended for everyday health as well as young children as well as lactating mothers.

Not just good for your eyesight, the beta-carotene contained in carrots is great for other things too, like protecting against cancer and benefiting the skin.
